My family eats a ton of pork, we always have.  Sheet Pan Pork Tenderloin is one of my favorite ways to get dinner on the table fast.  Everything cooks in one pan, and the pork is so tender and juicy.  But if pork chops are more your speed, or they are on sale Smothered Pork Chops are the ultimate comfort food!

Last year we purchased our own pig we eat so much pork.  It has to be the most amazing meat ever, and I love always having a freezer stocked with meat.  Then when I am busy these baked pork chops can be ready in no time. Just throw some roasted potatoes in the oven at the same time and dinner is done.

You may remember last month when I shared the Instant Pot Pork Tacos recipe I talked about my trip to Michigan with the National Pork Board and learning all about how pigs are raised.  We learned a lot about how the pigs are cared for, but also a lot about cooking pork properly.

When you think of pork, do you think of something that is dry and boring or something that is juicy and flavorful?  Well, if you are thinking dry and boring it is all because you are cooking it wrong!  Science has come a long way and it is now safe to cook pork to 145 degrees.  You know what that means, right?  You make baked pork chops and still get juicy and flavorful pork!!

What Temperature to Cook Pork to

A few years ago the temperature recommendation was changed to 145 degrees. The reason it was cooked to a higher temperature before was because of trichinosis.  Trichinella is a parasite that pigs could get, and it could be passed onto humans if it wasn't killed in the cooking process.  Well, with the change in biosecurity, the way pigs are raised, and the food they eat, this is NOT a risk anymore.  Trichinella is usually found in the dirt, worms etc. So when pigs were raised outside, they would dig in the dirt and pick up this parasite.  Commercial pig farms are all in doors now.  This not only makes it so they are not exposed to Trichinella, but it also means that the pigs are so much more comfortable.  So use a meat thermometer and stop cooking your pork chops to death.  There is no reason too!!

How Long to Bake Pork Chops

This will really depend on how thick the meat you are using is. Also if it has a bone in it, it tends to take longer. I recommend starting with your oven at 425 degrees and cooking for 15 minutes.  At this point use a meat thermometer to check and see how it is doing.  If you have thinner cut pork chops you may be done, if you have about 1 inch thick pork chops you will need a couple more minutes.  Thicker still?  Keep checking every 5 minutes.

How to Bake Pork Chops

  • Use an oven safe dish
  • Brush the pork chops with oil and season with your desired seasoning.  Here I mix the oil with the Dijon mustard and garlic, then just rub that on the pork.
  • Make sure the oven is up to temperature before you put the pork in.
  • Use a thermometer to check the temperature to make sure you DO NOT over cook the meat.

Ingredients

  • 4 boneless pork chops
  • 3 Tbls olive oil
  • 2 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 425 degrees.
  2. In a small bowl mix together olive oil, mustard, garlic, salt, oregano and black pepper.  Brush evenly over both sides of the pork chops.
  3. Place pork chops in an oven safe baking dish.  Bake for 15 minutes for until meat thermometer is 145 degrees.
